It's called an Upside Down Pizza because you put the cheese on first, then tomato sauce afterwards to stop the base going soggy. Here it is if you want to give it a go.
You can either make your dough yourself, or use a ready made dough like I did. Once I rolled it into a slipper shape rather than round (on purpose of course) and placed on a pizza stone, I covered the base with grated hard mozzarella cheese, and then topped this with blobs of basic tomato sauce made from passata, thinly sliced tomatoes (I like to remove the skins first) and onions.
I cooked for about 10 minutes and then I finished off with fresh Basil and black pepper. The result was a lovely, crispy dough base (no soggy middle) and a fresh, simple tasting pizza. The cheese also had a nice crispy finish- - a bit like cheese on toast. Delicious - will definitely give it a go again.
