One thing that we realised when we were on holiday in Santorini is that their white wines, Assyrtiko and Nykteri, are among the best white wines in the world.
We saw this Nykteri on the wine menu when we were at a fabulous pizza restaurant called 'Skiza cafe' in Oia. When we selected it our waiter, fabulous guy who couldn't do enough for us, told us his brother owned the vineyard, and I wouldn't doubt him. It's a small island where everyone knows each other.
Nykteri is a full-bodied white wine with citrus aromas combined with a pleasing mineral character derived from the volcanic soil it is grown in that is Santorini. If you can find it at home it might not be cheap but I strongly recommend you try it.
